Famous Dave's Famous Fries are a textbook case of the shared-fryer problem. The fries themselves are clean: potatoes, soybean oil, salt. But the same oil cooks hand-breaded chicken, Sweetwater Catfish Fingers, Onion Strings, Cheese Curds, and other heavily-breaded items — meaning wheat, milk, and fish proteins are continuously circulating in that oil. Famous Dave's allergen PDF is explicit about this with a prominent disclaimer: "Due to our use of shared fryers, cross-contact may occur." For celiac disease, this is a hard disqualifier.
