Why frozen? Shake Shack grinds its own beef, brews its own tea daily, hand-spins its shakes, and hand-bread its chicken. So why are the fries frozen? The answer is history: when Shake Shack graduated from its hot-dog cart origins to a 400-square-foot kiosk in Madison Square Park in 2004, the kitchen was too small for fresh-fry prep. Frozen crinkle-cut became the default — and the CEO later called it "the best fry we could find that was frozen." In 2013 the chain briefly tried fresh-cut fries; fan outcry was loud enough that they reverted to the frozen crinkle in 2016.
