How we counted
Ingredient counts are distinct named substances per each chain's published allergen or ingredient disclosure — the FDA-label sense. Sub-components inside parentheses (the constituents of "vegetable oil", the breakdown of "natural beef flavor", the parts of a leavening blend) are counted individually. "And/or" alternative oils count as a single slot, because only one is in the fryer on any given day. Counts marked with ≈ are based on Frypedia's editorial groupings for chains where the chain hasn't published a full raw ingredient list; we treat these as approximate. For McDonald's, both the current chain-published count (11) and the widely-circulated supplier-disclosure count (19) are real numbers answering slightly different questions — we show the chain-published one here.
